Thomas Sjögren’s Christmas Buffet at Hällsnäs
A Christmas buffet beyond the ordinary, just outside Gothenburg, set in a sparkling setting and crafted by Thomas Sjögren (Chef of the Year 2015) together with his team. The concept is partly traditional, yet with a strong focus on game, vegetables, and fish & seafood – all designed to create a sustainable, innovative, and playful Christmas dining experience.
Historically, vegetables have often played a smaller role in the overall spread – but we love creating magic with our green friends. That’s why we’ve chosen to give our vegetable selection a much more prominent place, along with fish and seafood, inspired by our close proximity to the sea.
For those who wish to extend the Christmas experience, cozy hotel rooms await where you can relax in comfort and luxury. Wake up to a breakfast buffet overlooking the lake and start your day in the best possible way – refreshed, relaxed, and filled with inspiration.

Fish & Seafood
Our fish & seafood table offers generous servings, including boiled shellfish and a variety of our smoked and cured salmon. In addition, you’ll find halibut, seafood pâtés, and a wide selection of delicious sauces.
We are proud of our green dishes
On the vegetable table, you’ll find, among other things, Scottish salads, lacto-fermented and pickled vegetables harvested throughout the year. Of course, there is also a variety of warm dishes.
No Christmas buffet is complete without the cold cuts
Here, we serve the classic Christmas ham, pâtés, and jellies.
The final savory section features our warm dishes. Here you’ll find mini sausages along with meatballs, spare ribs, and braised cabbage – all deliciously prepared for you to enjoy.
Dessert table with sweet & salty
On the cheese table, we focus on quality and local produce. Here, we serve cheeses from western and southern Sweden, offering a variety from soft white-mold cheeses to aged hard cheeses.
Our sweets table is the crown jewel. It concludes the meal on a high note with an abundance of homemade candies and other tempting treats representing flavors from all corners of Sweden.
